Simon Rogan
Simon Rogan is celebrated as an chef and founder of UMBEL, an international restaurant group known for its award-winning restaurants with a strong farm-to-table ethos. With a portfolio spanning the UK, Malta, Hong Kong, and Thailand, UMBEL is home to some of the world’s most celebrated restaurants, which collectively hold nine Michelin stars and two Michelin Green Stars.Â
The journey began in 2002, when Simon launched L’Enclume in Cartmel, England focusing on hyperlocal, seasonal ingredients. The restaurant now boasts three Michelin stars, holds joint first place in La Liste rankings of 1000 restaurants worldwide, and has five AA Rosettes.
In 2008, UMBEL opened Rogan & Co in Cartmel, which earnt a Michelin star in 2018 and three AA Rosettes. UMBEL established Our Farm in the Lake District in 2011, ensuring a supply of the best possible local and sustainable produce. The farm now provides the majority of produce to all UMBEL’s UK restaurants. In 2016, UMBEL launched Aulis Cartmel, a six-seater chef's table at L’Enclume.
A London outpost of Aulis followed in 2017, as a standalone 12-seater chef’s table in Soho, which was awarded its first Michelin star in 2024.
Expanding internationally, UMBEL launched Aulis Hong Kong in January 2019 and Roganic Hong Kong in February 2019, earning a Michelin star in December 2019. Henrock, an elegantly informal restaurant within Linthwaite House, debuted in the Lake District in October 2019.
The group’s sustainability efforts led to both L'Enclume and Roganic Hong Kong receiving a Michelin Green Star in 2021. In 2022, UMBEL opened The Baker & The Bottleman, a bakery and natural wine bar in Hong Kong. In early 2023, the group expanded to Valletta, Malta, with the opening of ION Harbour by Simon Rogan, which, in 2024, became the first-ever restaurant on the island to receive two Michelin stars. In December 2023, the group expanded into Thailand, with the opening of Aulis Phuket, which received its first Michelin star in 2024. Â
Simon was awarded an MBE in the New Year’s Honours List 2024 for his services to the food industry.
In May 2024, UMBEL furthered its commitment to nurturing talent from within, with Tom Barnes’s solo restaurant, Skof, being the first supported venture. Less than a year after opening, Skof earned its first Michelin star at the 2025 Michelin Great Britain and Ireland awards.

Oli MarlowOli's journey with Simon began at the original Roganic pop-up in Marylebone, overseeing its transition to a permanent site and the expansion to Hong Kong. He was instrumental in securing Roganic Hong Kong's first Michelin star and Green Michelin star. In addition to his work at Roganic, Oli oversees Aulis London, Aulis Phuket, ION Harbour, and The Baker & The Bottleman.

Adam CatterallAdam was one of the founding members of our team when we opened in 2019. He started as a sous chef and worked his way up to the role of head chef in 2023. Over the last five years, he has worked with Simon and executive chef Oli Marlow to push the boundaries of sustainable gastronomy, helping us retain our Green Michelin star.

Mark CatchpoleMark joined the team in March 2022 after working at renowned British restaurants The Fat Duck and Dinner by Heston Blumenthal, before venturing to Australia to take up a senior sous chef role at Attica. Mark is always looking for new and inventive ways to uphold Simon's commitment to the natural world.

Kieran McGarrigleKieran has worked at Simon's restaurants across the world, including L'Enclume and Rogan & Co in Cartmel, as well as Roganic in London. He brings a deep understanding of Simon's ethos to our dishes and is passionate about minimising waste in the kitchen.

Antonio MereuAntonio's journey with Simon Rogan began in 2015 as a commis waiter at L'Enclume. After three years in The Lakes, Antonio joined the opening team at Roganic London as head waiter, before making his way to Roganic Hong Kong in 2021. With a passion for the art of hospitality, Antonio ensures that every guest's experience is nothing short of extraordinary.

Priscilla TamPriscilla joined us in 2021 and is responsible for crafting our soft drink pairings. She follows our zero waste philosophy by utilising by-products, stalks and trimmings from the kitchen to create creative non-alcoholic beverages that perfectly complement our dishes.

Graeme CumineGraeme Cumine is the restaurant manager at L'Enclume, Simon Rogan's flagship restaurant in the Lake District. With over four years of experience in this role, he plays a key role in the restaurant's journey to earning three Michelin stars. Graeme was recognised in The Caterer's Acorn Awards for 2022, celebrating the industry's top talent under 30. He has joined brought his wealth of experience to Hong Kong to assist us with the re-opening.

Valentin MouillardValentin grew up in the Muscadet region of the Loire Valley and is the grandson of a winemaker. After studying hospitality and working in France, he joined the L’Enclume team in 2016 and became head sommelier three years later, receiving the Michelin Sommelier Award in 2024. He showcases diverse wines from small-scale, ethically-minded producers, offering unique pairings to enhance our guests' dining experience.

Titouan CharlesTitouan is new to the Roganic team this year but brings a wealth of experience. From Mouzillon in the Loire Valley, he studied cooking before discovering his passion for wine and hospitality. He graduated as a sommelier and worked in Michelin-starred restaurants and bars in France, before arriving in Hong Kong in late 2024.
